Tasty Two-Ingredient Recipes

Every weekend, you can find me in the kitchen baking up a storm, whether it be my classic banana bread, or rich red velvet cupcakes. Recently, I’ve become obsessed with two-ingredient recipes, which led to an extreme hunt for all of my favourite recipes that had been made healthy with this amazing idea. I mean, what’s better than a recipe that consists of two ingredients, and takes only two minutes to make? Well,  technically not two minutes… I’m just getting too excited over the fact that they’re so easy! So today, I wanted to show you two of my favourite two-ingredient recipes for a healthy twist on pancakes, and coconut macaroons (not macarons).

Pancakes

1 ripe banana

2 eggs

Method:

Just mash together the ingredients and there you have it, your pancake batter is complete! At this point, if you wanted you could also add any berries, chocolate chips, or any other filling you like to add while frying them! Then, simply continue with this recipe as you would with any pancake recipe; scoop some batter up and pour it on your pan, on low to medium heat, flip them over until they’re golden brown on each side, and serve!

The first time I made this, no one would have guessed what I even put in them! They looked and tasted just like normal pancakes! It was amazing!

Coconut Macaroons

macaroonsThis recipe makes about 14 mini macaroons, I usually double the recipe to stock up on these addictive bite-sized macaroons!

You will need:

1 cup sweetened shredded coconut

1 egg white

Method:

Preheat your oven to 350 degrees.

All you have to do is whisk one egg white and then mix it into the shredded coconut until everything is combined and it all holds together nicely. Spray a cooking sheet with nonstick cooking spray, grease it with butter, or use parchment paper to make sure these babies don’t stick. Then, using any round shaped spoon, press some of the mixture into the spoon so that it holds together, and then place them onto the cooking sheet. Once you’ve shaped your mixture into tiny balls, place the cooking sheet in the oven and bake the macaroons for a few minutes until they become a light golden brown. The bottom halves will become a light brown quickly, and once they do, I suggest turning on the broiler, to have the tops become golden brown as well. Once they’re ready, simply remove them from the oven and let them cool! (Don’t forget to turn your oven off!)

For an extra little treat, melt some chocolate and drizzle it over the macaroons, or dip the macaroons in the chocolate.

NOTE: Make sure you watch the macaroons while baking because they tend to burn quickly!! Trust me on this one!
